Confections

okay, so i never thought you could pair chocolate and wine, like maybe it was actually sacredligious or something.  but this weekend i tried it and it was oh so wonderful.  the secret is to match the chocolate with a wine that is as sweet or sweeter than the chocolate itself .  for example,  cabernet sauvignon, zinfandel, and lot all pair up very well with dark chocolate. i’ve heard that pinot noir and merlot go good with milk chocolate but i have not tried that yet.  so my next “project” is to get a good bottle of red wine and white wine and sit down with a box of assorted chocolate truffles, and stuff myself.

Healthy chocolate?  Are you kidding me?  I love a good coffee flavored dark chocolate combination, but can it really be healthy?  Yes!  Supposedly the cacao content has to be high enough for it to have health benefits, but I’m not sure how high that is.  I just love the taste of it.  Lindt, Russell Stover, Ghiardelli, are all fine, but I want a dark chocolate mixed with crushed coffee beans for my late night websurf sessions. I’m not much of a coffee drinker, so gimmee some dark chocolate & espresso beans anyday.
